The Wrestling Observer Newsletter gives you non-kayfabe news (reports on backstage events, gives matches rating out of five-stars etc.) The Pro-Wrestling Torch Newsletter is similar, and probably the most respected publication of its kind in America. I can't off-hand think of any magazines that treat wrestling like its real or anything. You have Power Slam, non-kayfabe, in the UK along with Fighting Spirit Magazine, but the latter also involves a lot of mixed martial arts.
