IN NASCAR, why do the pit crew always give their car a running start?

Those things have like 600+ HP..Why the hell do they need a running start?

They are there in case the car stalls while leaving the pits. 1st gear is usually a very low gear ratio, so it doesn't have a lot of bite.

Time is speed andSpeed is time Any second they can gain may be that second that makes their bumper cross the finish line first. Those cars have gear ratios for high speed which means they are slower taking off. Also it helps keep the engine from stalling.
