| Rust (see link for formation process) is nothing but iron(III) oxide Fe2O3, under hydrated form.Adding lemon juice is basically putting an acid (namely citric acid) in aqueous solution on it. The following reactions occur:Fe2O3 + 3H2O -> 2 Fe(OH)3Fe(OH)3 + 3H+ -> Fe(3+) + H2OFe(3+) can then be eliminated by forming a complex with the citrate (or citric acid).I am not sure how the salt helps; it may be here just as a buffer, to keep the ion activity (or concentration) at a high level throughout the process. en.wikipedia.org
