| I believe my butter has turned rancid. It has passed the expiration date on the box and has a slightly sour taste. I read online that the sour taste is from butyric acid (when the fat decomposes) and that you can "restore" rancid butter by soaking it in a baking soda solution, which would neutralize the butyric acid. Would the butter be safe to eat then?

| I use butter slowly also and keep it in the freezer, keeping out a stick at a time in the frige.If you prefer room temp butter, get one of those pottery butter urns that keep it suspended in water and the evaporation through the pottery keeps it cooler. That way, if it goes rancid, you aren't out that much.
