| I want to throw a small dinner party (6 people). One is a veggie.Any ideas for main dishes which can be adapted or adjusted for the one person? I just don't want to serve them something totally different (like a lame pasta bake) as they've told me they hate this! I could only think of meat kebabs and hallumi/veg kebabs or casserole. Both a bit boring! Was thinking chicken, turkey or a meaty fish for the 'meat' people.BTW- yes, I HAVE already considered doing it 100% vegetarian, but as a meat eater who doesn't gorge to excess on cheap factory-farmed muck, the dinner party is an opportunity to cook meat as a celebration.

| Have you thought of doing an indian vegetable curry type thing, if you do lots of different dishes people can choose a variety of dishes some meat ones and veggie options for those that prefer not to eat meat, there are loads of different types of dishes that can be done - sans meat.

| I would look on the food network website for recipes from Giada DiLaurentis. She is not exclusively vegetarian but makes a lot of her dishes without meat and they are delicious. I like to cook vegetarian at least 3 times a week. Last night I did a really good dish- it was part BBQ and part pasta. Grilled yellow squash, zucchini, red peppers and onions on the BBQ. Once cooked, drizzled with a little truffle oil and then added about 1/2 lb of cooked penne (used Barilla plus for more protein). Tossed in a little more olive oil, some fresh chopped garlic, parsley and whole basil leaves. Finally another dash of olive oil, balsamic vinegar and a little dijon mustard, salt and pepper to taste. It was great- never missed the meat. Oh yeah top with some good shredded parmesan.

| You can appeal to everyone by doing it buffet style with a summer al fresco style: different breads+cheeses, dips, olives, meats, meat kebabs, veg kebabs, fruit kebabs, pates, quiches, fellafel, stuffed/roasted peppers, stuffed mushrooms followed by a summer pudding. You can't say that you won't have a substantial meal outta all that choice! Good luck.

| you can use a large or a couple medium portabella mushroom caps (remove the spores from the bottoms of the caps)for the one person and just cook theirs in another pan. Here's your recipe:6 boneless skinless chicken breasts coated in your favorite spicy mustard. While they're marinating preheat oven to 400F and take 2 large red bell peppers, cut in thirds and 4 whole bubs of garlic with points cut off, and 1 tbsp olive oil, wrap in foil, roast for 45 minutes. Let peppers and garlic cool to handle then over low heat 1 tbsp olive oil in large frying or saute pan and squeeze garlic out of its skins into oil and stir till well distributed and add chicken breasts smooth side up, and raise heat to medium to medium high. Remove skin from peppers and then place them on top of the chicken laying flat skin side up on smooth side of chicken. turn chicken after total 7-8 minutes on each side, lowering heat slightly if needed. Mushrooms do the same way but maybe only need 5-6 minutes on each side. when you take out the chicken or mushrooms you can deglaze the pan with a couple tbsps white wine and drizzle it over the plate. You can even crumble feta or some other fancy cheese on top.

| do a BBQ and throw the meat on for your meat eating guests and a veggie burger or veggie kabobs on for the vegetarian... then you can make salads and side dishes with or without meat... does this Vegetarian eat fish (some of them do)? then you could make a fish meal and everyone will be happy.

| Serve portabella mushrooms and offer a great pasta salad, just sent one to someone else that is doing a veggie wedding. Take red potatoes, slice in half, rub all sides with olive oil and sprinkle your favorite spice on the flat side, put flat side down and bake at 350 for about 25min or fork tender, serve flat side up, looks pretty, taste great, offer sour cream on the side. This way if you add this to your menu, with a good salad, your veggie friends will not feel left out. Take a tomato, half it and scoop it out, make some couscous, add some celery, grated carrot, small amount of raisins, and top it with a good sauce from trader joes, or a touch of crushed pineapple, this goes a long way, it only takes a tablespoon or two to fill it. Good luck, and good for you.
