I've found that using really good pasta flour makes life easier as well as just plenty of practice with the pasta dough rolling machine. I also think it's best to make it as you're ready to use it - the fresher the better, though I understand it can be frozen quite successfully.

You have difficulty in making fresh pasta or cooking the pasta?If it is the making the pasta, then you need to adjust flour-egg mixture. You can add little semolina to make the dough manageable. Alow the pasta to stand for twenty minutes so it will form well.For cooking the pasta, boil the water well befor you add pasta. Add spoon full of oil to the boiling water.
