I just made a garlic/olive oil w/ canned tomatoes.. It was light and good for you....I chopped about 3 cloves garlic and heated about 5 tblspoons of olive oil in pan.... Do not burn garlic and to that I added a small can of diced tomatoes I didn't drain it... I let it reduce and thicken.. It was good/easy... You can also add a litel italian seasoning for flavor as well... Or onion..... It's versatile...

Bake chicken breast with one table spoonfull olive oil, 2 cloves garlic sliced, one fresh tomato chopped, half onion diced, chopped oregano and one cup of water. When the chicken cooked, strain the sauce and reduce it to 50%. It's not only healthy but also low fat, low calorie.
