| Is it possible to home can potato soup? I know how to make it, I just wondered if I could can ahead of time while I have fresh potatoes, onions and while celery is so cheap. Anybody ever canned this before? Any bad experiences or good experiences? Nothing better than potato soup on a snowy day and wouldn't it be great to not have to go to the store and buy all of the stuff to put in it, just open a jar already made up?! If you have an awesome recipe to can this please let me know and I sure will try it and think of whoever gave me the recipe every time I open a jar this winter.

| I wouldn't home-can something that low-acid, unless I had to. It would probably be safe, but 'probably' doesn't really cut it. If you want to know how, find an old cookbook, from before everyone had freezers. (Freezing is safer. You could freeze it flat, in plastic bags, and stack it tidily.)
