One thing you could do is have her write a sort of introduction about herself, and then use each letter of her name to describe herself or something like that. For example, if her name is Nicole, you could put:

N is for nice, because I always try my best to be nice to everybody.
I is vor interesting .....

Or something like that. If you make it fun for her, she will probably enjoy making something up to tell her class, and her class will probably enjoy listening to her.
