My choice would be Ramses the great, otherwise known as Ramses II, he reigned for a very long time (66 Years), fought the first well documented battle in history (Kadesh), built on a monumental scale (Abu Simbel & Karnak, etc.) and was (possibly) the Pharaoh of the Exodus. Akhnaten and Hatshepsut would also be good choices.
